This Forgotten Chicken Casserole is the ultimate “set it and forget it” dinner that transforms simple ingredients into pure comfort food while you walk away and live your life.

- 4–6 bone-in chicken pieces (thighs or drumsticks)
- 1 cup uncooked long-grain white rice
- 2½ cups chicken broth
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 packet (1 oz) dry onion soup mix
- ¼ cup butter, cut into small pieces
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and freshly ground black pepper to taste
- 1 cup frozen mixed vegetables (optional)
Instructions
- Preheat oven to 350°F (175°C) and spray a 9×13 inch baking dish with non-stick cooking spray.
- In a medium bowl, combine rice, chicken broth, both condensed soups, and dry onion soup mix. Stir well and add frozen vegetables if using.
- Pour rice mixture into the prepared baking dish and spread evenly. Dot with butter pieces.
- Pat chicken pieces dry with paper towels and season both sides with salt, pepper, garlic powder, and paprika.
- Arrange chicken pieces on top of rice mixture, skin side up, spacing evenly throughout the dish.
- Cover tightly with aluminum foil and bake for 1 hour and 15 minutes without opening the oven door.
- Remove foil (be careful of hot steam) and return to oven. Bake uncovered for an additional 15-20 minutes until chicken is golden brown and reaches 165°F (74°C) internally.
- Remove from oven and let rest for 10 minutes before serving.
