4 English muffins, split in half
½ cup pizza sauce or marinara sauce
1 cup shredded mozzarella cheese
4 large eggs
8 slices of cooked bacon, crumbled (about ½ cup)
¼ cup diced bell peppers (red, green, or mix)
¼ cup diced onions
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons chopped fresh herbs (parsley or basil) for garnish
Instructions
- Preheat oven to 400°F (200°C). Split English muffins and place cut-side up on a baking sheet.
- Pre-toast muffins in the oven for about 3 minutes until just beginning to crisp.
- Spread 1 tablespoon of pizza sauce on each muffin half, leaving a small border.
- Sprinkle a small amount of mozzarella cheese over the sauce layer.
- Distribute diced bell peppers and onions among the muffin halves.
- Create a small well in the center of toppings and carefully crack an egg into each.
- Add crumbled bacon pieces around the egg area.
- Season with salt, pepper, and Italian seasoning.
- Top with remaining mozzarella and Parmesan cheese.
- Bake for 8-12 minutes until cheese is melted and eggs are cooked to desired doneness.
- Remove from oven, sprinkle with fresh herbs, and serve immediately.
