English Muffin Breakfast Pizza

4 English muffins, split in half

½ cup pizza sauce or marinara sauce

1 cup shredded mozzarella cheese

4 large eggs

8 slices of cooked bacon, crumbled (about ½ cup)

¼ cup diced bell peppers (red, green, or mix)

¼ cup diced onions

2 tablespoons grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons chopped fresh herbs (parsley or basil) for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Split English muffins and place cut-side up on a baking sheet.
  2. Pre-toast muffins in the oven for about 3 minutes until just beginning to crisp.
  3. Spread 1 tablespoon of pizza sauce on each muffin half, leaving a small border.
  4. Sprinkle a small amount of mozzarella cheese over the sauce layer.
  5. Distribute diced bell peppers and onions among the muffin halves.
  6. Create a small well in the center of toppings and carefully crack an egg into each.
  7. Add crumbled bacon pieces around the egg area.
  8. Season with salt, pepper, and Italian seasoning.
  9. Top with remaining mozzarella and Parmesan cheese.
  10. Bake for 8-12 minutes until cheese is melted and eggs are cooked to desired doneness.
  11. Remove from oven, sprinkle with fresh herbs, and serve immediately.
