Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 teaspoon salt
  • 1 cup (226g) unsalted butter, cold and cubed
  • 2 cups (220g) pecans, roughly chopped
  • 1 cup (226g) unsalted butter
  • 1 cup (200g) packed brown sugar
  • 1/4 cup (60ml) honey
  • 2 tablespoons heavy cream
  • 1/4 teaspoon salt
  • 2 cups (340g) semi-sweet chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on sides.
  2. Whisk together flour, sugar, and salt. Add cold cubed butter and work mixture until it resembles coarse crumbs.
  3. Press mixture firmly into prepared pan and bake for 15-18 minutes until edges are just golden.
  4. Toast pecans on a baking sheet for 5-7 minutes until fragrant and slightly darkened.
  5. In a saucepan, combine butter, brown sugar, honey, cream, and salt. Simmer over medium heat for 5-7 minutes until thickened and amber colored.
  6. Remove caramel from heat, stir in toasted pecans, and pour over baked shortbread. Let cool for 30 minutes.
  7. Melt chocolate chips with vegetable oil in the microwave in 30-second intervals. Pour over caramel layer and spread evenly.
  8. Refrigerate for at least 2 hours until completely set. Lift from pan using parchment paper and cut into bars with a warm knife.
