- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 teaspoon salt
- 1 cup (226g) unsalted butter, cold and cubed
- 2 cups (220g) pecans, roughly chopped
- 1 cup (226g) unsalted butter
- 1 cup (200g) packed brown sugar
- 1/4 cup (60ml) honey
- 2 tablespoons heavy cream
- 1/4 teaspoon salt
- 2 cups (340g) semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on sides.
- Whisk together flour, sugar, and salt. Add cold cubed butter and work mixture until it resembles coarse crumbs.
- Press mixture firmly into prepared pan and bake for 15-18 minutes until edges are just golden.
- Toast pecans on a baking sheet for 5-7 minutes until fragrant and slightly darkened.
- In a saucepan, combine butter, brown sugar, honey, cream, and salt. Simmer over medium heat for 5-7 minutes until thickened and amber colored.
- Remove caramel from heat, stir in toasted pecans, and pour over baked shortbread. Let cool for 30 minutes.
- Melt chocolate chips with vegetable oil in the microwave in 30-second intervals. Pour over caramel layer and spread evenly.
- Refrigerate for at least 2 hours until completely set. Lift from pan using parchment paper and cut into bars with a warm knife.
