This Easy Taco Casserole brings all the taco night flavors you love into one dish – no shell cracking, no filling falling out, just pure comfort food goodness in every scoop!

- 1 lb (450g) ground beef (80/20 lean-to-fat ratio)
- 1 medium onion, finely diced (about 1 cup)
- 2 cloves garlic, minced
- 1 packet (1.25 oz/35g) taco seasoning mix
- 1 can (15 oz/425g) black beans, drained and rinsed
- 1 can (14.5 oz/411g) diced tomatoes, undrained
- 1 can (4 oz/113g) diced green chilies
- 3 cups (85g) tortilla chips, lightly crushed
- 2 cups (8 oz/225g) shredded Mexican cheese blend
- 1 cup (8 oz/225g) sour cream
- 2 green onions, sliced (for garnish)
- 1 small handful fresh cilantro, chopped (optional)
- 1 avocado, diced (optional, for serving)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Brown ground beef in a large skillet over medium-high heat for 5-7 minutes. Add diced onion halfway through and cook until beef is no longer pink and onions are translucent.
- Add minced garlic and cook for 30 seconds until fragrant. Stir in taco seasoning, diced tomatoes with juice, and green chilies. Simmer for 3-4 minutes until slightly thickened.
- Fold in black beans and heat through for another 2 minutes.
- Layer half of the crushed tortilla chips on the bottom of your prepared baking dish.
- Spoon the meat mixture evenly over the tortilla chip layer. Spread sour cream over the meat mixture, then sprinkle 1½ cups of shredded cheese on top.
- Bake uncovered for 20 minutes until cheese is melted and edges are bubbling.
- Add remaining tortilla chips and cheese on top, then return to the oven for an additional 5-7 minutes.
- Remove from oven and let stand for 10 minutes before serving.
- Garnish with sliced green onions, fresh cilantro, and diced avocado if desired.
