Easy Taco Casserole Ready in 30 Minutes


Description

This taco casserole is the answer to “What’s for dinner?” when you’re craving Mexican flavors but don’t have time to fuss with individual tacos. Ready in just 30 minutes and guaranteed to disappear just as quickly!


Ingredients

  • 1 lb (454g) lean ground beef
  • 1 packet (1.25 oz/35g) taco seasoning
  • 1/2 cup (120ml) water
  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 1 can (14.5 oz/411g) diced tomatoes with green chilies
  • 2 cups (8 oz/226g) shredded Mexican cheese blend, divided
  • 3 cups (3 oz/85g) tortilla chips, lightly crushed
  • 1 cup (8 oz/226g) sour cream
  • 2 green onions, thinly sliced
  • 1/4 cup (4 tablespoons) fresh cilantro, chopped (optional)
  • 1 avocado, diced (for serving)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Brown ground beef in a large skillet over medium-high heat until no pink remains, about 5-7 minutes. Drain excess fat.
  3. Add taco seasoning and water to the beef. Simmer for 2-3 minutes until slightly reduced.
  4. Spread half of the crushed tortilla chips in the bottom of the prepared baking dish.
  5. Layer the seasoned beef mixture evenly over the chips.
  6. Distribute the black beans over the beef, followed by the diced tomatoes with green chilies.
  7. Sprinkle 1 1/2 cups of the shredded cheese over the tomato layer.
  8. Top with remaining crushed tortilla chips and the remaining 1/2 cup of cheese.
  9. Bake for 15-20 minutes until cheese is melted and bubbly.
  10. Let stand for 5 minutes, then top with sour cream, green onions, cilantro, and diced avocado before serving.
