Easy Southern Peach Cobbler

  • 8 cups fresh peaches, peeled and sliced (about 810 medium peaches)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Combine sliced peaches with 1 cup sugar, brown sugar, cinnamon, nutmeg, lemon juice, and vanilla in a large bowl. Toss gently and let sit for 15-20 minutes.
  2. Preheat oven to 375°F. Place butter in a 9×13-inch baking dish and put in the oven until melted, about 5-7 minutes.
  3. While butter melts, whisk together flour, 1 cup sugar, baking powder, and salt. Stir in milk just until combined.
  4. Remove baking dish with melted butter from the oven. Pour batter over the butter without stirring.
  5. Spoon the peach mixture evenly over the batter, including all the juices. Do not stir.
  6. Bake for 40-45 minutes until golden brown and bubbling. The batter will rise through the peaches as it bakes.
  7. Allow to rest for 15-20 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
