- 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
- 1 cup orange juice, freshly squeezed preferred
- 1/4 cup low-sodium soy sauce
- 1/2 cup brown sugar, packed
- 2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes
- 2 tablespoons orange zest
- 1/4 cup cornstarch
- 1/4 cup cold water
- 2 green onions, sliced for garnish
- 1 tablespoon sesame seeds for garnish
- 2 cups white rice, cooked, for serving
Instructions
- Trim excess fat from chicken thighs and cut into 1-inch pieces. Place in slow cooker.
- In a medium bowl, whisk together orange juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, red pepper flakes, and orange zest until sugar dissolves.
- Pour sauce mixture over chicken and stir to coat all pieces.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender.
- In a small bowl, whisk cornstarch and cold water to create a slurry. Stir into the slow cooker.
- Continue cooking uncovered for 30 minutes until sauce thickens.
- Serve hot over cooked rice and garnish with green onions and sesame seeds.
