Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 cup orange juice, freshly squeezed preferred
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup brown sugar, packed
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons orange zest
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 2 green onions, sliced for garnish
  • 1 tablespoon sesame seeds for garnish
  • 2 cups white rice, cooked, for serving

Instructions

  1. Trim excess fat from chicken thighs and cut into 1-inch pieces. Place in slow cooker.
  2. In a medium bowl, whisk together orange juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, red pepper flakes, and orange zest until sugar dissolves.
  3. Pour sauce mixture over chicken and stir to coat all pieces.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours until chicken is tender.
  5. In a small bowl, whisk cornstarch and cold water to create a slurry. Stir into the slow cooker.
  6. Continue cooking uncovered for 30 minutes until sauce thickens.
  7. Serve hot over cooked rice and garnish with green onions and sesame seeds.
