Easy Roasted Pumpkin Recipe


Description

The easiest way to transform plain pumpkin into caramelized autumn gold. Just 30 minutes to perfect roasted pumpkin cubes!


Ingredients

  • 1 medium sugar pumpkin (34 pounds)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried herbs (such as rosemary, thyme, or sage) – optional
  • 2 cloves garlic, minced (about 1 tablespoon) – optional
  • 1 tablespoon maple syrup or brown sugar – optional for a sweeter version

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Wash the pumpkin, then carefully cut off the stem end to create a flat surface.
  3. Stand the pumpkin on this flat end and slice it in half from top to bottom.
  4. Scoop out all the seeds and stringy fibers using a large spoon or ice cream scoop.
  5. Cut each pumpkin half into 1-inch thick slices, then cut across these slices to create 1-inch cubes.
  6. Transfer the pumpkin cubes to a large mixing bowl and drizzle with olive oil.
  7. Add salt, pepper, and any optional seasonings, then toss thoroughly until every piece is evenly coated.
  8. Spread the seasoned pumpkin cubes in a single layer on your prepared baking sheet.
  9. Roast for 25-35 minutes, flipping the pieces halfway through cooking.
  10. Pumpkin is done when edges are golden brown and flesh is easily pierced with a fork.
