  • 8 oz (225g) good quality chocolate (milk or dark), chopped
  • 2 tablespoons (30ml) coconut oil

Instructions

  1. Step 1: Prepare the Cookie Base Begin by placing your Biscoff cookies in a food processor and pulse until they form fine crumbs. If you don’t have a food processor, place the cookies in a zip-top bag and crush them using a rolling pin. Transfer the crumbs to a medium-sized mixing bowl and set aside.
  2. Step 2: Create the Truffle Mixture In a large bowl, combine the softened cream cheese and Biscoff spread, beating with an electric mixer until completely smooth and fluffy, about 2 minutes. Add the powdered sugar and vanilla extract, continuing to mix until well incorporated. Gradually add the cookie crumbs to this mixture, folding them in until everything is evenly combined. The consistency should be similar to a thick cookie dough.
  3. Step 3: Shape the Truffles Cover the bowl with plastic wrap and refrigerate for about 30 minutes to firm up the mixture. Once chilled, use a 1-tablespoon measuring spoon or small cookie scoop to portion out the mixture. Roll each portion between your palms to form smooth balls. Place these on a parchment-lined baking sheet and return to the refrigerator for another 15-20 minutes to firm up further.
