- 4 boneless, skinless chicken breasts (about 6–8 oz/170-225g each)
- 1 tablespoon olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup (240ml) marinara sauce
- 8 oz (225g) fresh mozzarella, sliced into ¼-inch rounds
- ¼ cup (25g) freshly grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Step 1: Preheat your oven to 375°F (190°C). While it’s heating, prepare the chicken by patting it dry with paper towels. Combine the Italian seasoning, garlic powder, salt, and pepper, then sprinkle this mixture evenly over both sides of the chicken breasts, pressing gently to adhere.
- Step 2: Sear the chicken in a large oven-safe skillet with olive oil over medium-high heat for 3-4 minutes on each side until golden-brown. Remove the skillet from heat.
- Step 3: Add marinara sauce evenly over each chicken breast in the skillet. Transfer the skillet to the preheated oven and bake for about 15 minutes, or until the chicken reaches an internal temperature of 160°F (71°C).
- Step 4: Add mozzarella and Parmesan cheese over the chicken breasts, then return the skillet to the oven. Bake for an additional 5 minutes, or until the cheese is melted and starting to bubble.
- Step 5: Broil for 1-2 minutes to achieve golden-brown spots on the cheese. Garnish with fresh basil leaves and let rest for 3-5 minutes before serving your Easy Mozzarella Chicken.
