  • 4 tablespoons (56g) butter, softened and divided
  • 1 cup (113g) shredded cheddar cheese
  • 1 cup (113g) shredded Monterey Jack cheese
  • 2 tablespoons sour cream
  • 23 tablespoons prepared pico de gallo, drained
  • ½ cup cooked rice (preferably Spanish or Mexican-style)
  • ¼ cup refried beans

Instructions

Step 1: Prepare Your Workspace Lay out all your ingredients before starting. Shred your cheeses if not already done and mix them together in a bowl. Warm your tortillas in the microwave for 10-15 seconds to make them more pliable.

Step 2: Assemble Your Burrito Lay a tortilla flat on your work surface. Spread 1 tablespoon of sour cream in a rectangle in the center, leaving about 2 inches from the edges. Add half of your rice in a thin layer, followed by a spoonful of refried beans. Sprinkle about ¾ cup of your cheese mixture over these fillings, then add a tablespoon of drained pico de gallo.

Step 3: Master the Fold Now comes the crucial part of your cheese burrito! Fold the bottom edge up over the fillings, then fold in both sides. Roll forward to complete the burrito, keeping the sides tucked in as you go. The tighter your roll, the less likely your filling will escape during cooking. Press gently to seal.

Step 4: Butter and Grill Spread about 1 tablespoon of softened butter evenly across the outside of the burrito. Heat a skillet over medium-low heat until warm.
