Instructions
- Step 1: Sauté the Onion and Garlic: In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until softened. Add the minced garlic and cook for an additional minute, until fragrant.
- Step 2: Add Rice: Stir in the rice and cook for another 1-2 minutes, allowing it to toast slightly in the oil.
- Step 3: Add Broth and Seasonings: Pour in the chicken or vegetable broth, and add the lemon zest, lemon juice, dried oregano, salt, and black pepper. Stir to combine.
- Step 4: Cook the Rice: Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Step 5: Fluff and Serve: Once cooked, remove the saucepan from the heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork.
