- 1½ pounds (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 4 tablespoons (60ml) olive oil, divided
- 6 cloves garlic, minced (about 2 tablespoons)
- 1 teaspoon dried Italian herbs
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons (30ml) fresh lemon juice
- 2 tablespoons (8g) fresh parsley, chopped
- 2 tablespoons (30g) unsalted butter
Instructions
- Pat chicken dry with paper towels and cut into 1-inch cubes.
- In a medium bowl, combine 2 tablespoons olive oil, garlic, Italian herbs, paprika, salt, pepper, and red pepper flakes. Add chicken and toss to coat.
- Heat remaining olive oil in a large skillet over medium-high heat until shimmering.
- Cook chicken in batches (don’t overcrowd) for 3-4 minutes without disturbing, then flip and cook 2-3 minutes more until golden and cooked through (165°F).
- Return all chicken to the pan, reduce heat to medium-low, and add butter and lemon juice. Stir to create a light sauce that coats the chicken.
- Sprinkle with fresh parsley, toss once more, and remove from heat. Serve immediately.
