- 1 pound (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced (about 2 teaspoons)
- ¾ cup (90g) panko breadcrumbs
- ¼ cup (25g) regular breadcrumbs
- ¼ cup (25g) grated Parmesan cheese
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ¼ teaspoon cayenne pepper
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
- Lemon wedges for serving
Instructions
- Preheat oven to 425°F (220°C) and position rack in upper third. Pat shrimp completely dry with paper towels.
- In a medium bowl, combine panko, regular breadcrumbs, Parmesan, paprika, oregano, thyme, cayenne, salt, and black pepper.
- In a separate large bowl, toss dried shrimp with olive oil and minced garlic until evenly coated.
- Working with a few shrimp at a time, dredge in the breadcrumb mixture, pressing gently to adhere. Place on a wire rack set over a baking sheet, leaving space between each piece.
- Bake for 10-12 minutes until coating is golden brown and shrimp are opaque and cooked through.
- Remove from oven, garnish with fresh parsley, and serve immediately with lemon wedges.
