  • 1 pound (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (about 2 teaspoons)
  • ¾ cup (90g) panko breadcrumbs
  • ¼ cup (25g) regular breadcrumbs
  • ¼ cup (25g) grated Parmesan cheese
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 425°F (220°C) and position rack in upper third. Pat shrimp completely dry with paper towels.
  2. In a medium bowl, combine panko, regular breadcrumbs, Parmesan, paprika, oregano, thyme, cayenne, salt, and black pepper.
  3. In a separate large bowl, toss dried shrimp with olive oil and minced garlic until evenly coated.
  4. Working with a few shrimp at a time, dredge in the breadcrumb mixture, pressing gently to adhere. Place on a wire rack set over a baking sheet, leaving space between each piece.
  5. Bake for 10-12 minutes until coating is golden brown and shrimp are opaque and cooked through.
  6. Remove from oven, garnish with fresh parsley, and serve immediately with lemon wedges.
