- 4 boneless, skinless chicken breasts (about 2 pounds)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 oz cream cheese, softened and cubed
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- ½ cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- Season chicken breasts on both sides with garlic powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4-5 minutes per side until golden and cooked through (165°F internal temperature). Remove to a plate and cover.
- Reduce heat to medium and add minced garlic to the same pan. Sauté for 30 seconds until fragrant.
- Pour in chicken broth, scraping the bottom of the pan to release browned bits.
- Add cubed cream cheese and whisk constantly until it begins to melt.
- Stir in heavy cream and Parmesan cheese, whisking until smooth. Let simmer for 2-3 minutes until slightly thickened.
- Return chicken to the pan, spooning sauce over each piece. Simmer for 2-3 more minutes until heated through.
- Garnish with fresh parsley and serve immediately.
