Easy Cream Cheese Chicken

Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz cream cheese, softened and cubed
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season chicken breasts on both sides with garlic powder, Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4-5 minutes per side until golden and cooked through (165°F internal temperature). Remove to a plate and cover.
  3. Reduce heat to medium and add minced garlic to the same pan. Sauté for 30 seconds until fragrant.
  4. Pour in chicken broth, scraping the bottom of the pan to release browned bits.
  5. Add cubed cream cheese and whisk constantly until it begins to melt.
  6. Stir in heavy cream and Parmesan cheese, whisking until smooth. Let simmer for 2-3 minutes until slightly thickened.
  7. Return chicken to the pan, spooning sauce over each piece. Simmer for 2-3 more minutes until heated through.
  8. Garnish with fresh parsley and serve immediately.
