  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 tablespoons (113g) unsalted butter, divided
  • 6 garlic cloves, minced (about 2 tablespoons)
  • 2 teaspoons paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • ½ teaspoon red pepper flakes
  • ½ cup (120ml) chicken broth
  • ½ cup (50g) freshly grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Step 1: Prepare the Cowboy Butter In a small bowl, combine 6 tablespoons of softened butter with 1 tablespoon minced garlic, paprika, cayenne pepper, dried oregano, lemon juice, 2 tablespoons of the chopped parsley, chives, and red pepper flakes.   2. Step 2: Cook the Pasta Bring a large pot of generously salted water to a rolling boil. Add the linguine and cook until al dente according to package instructions, usually 8-10 minutes. Before draining, reserve ½ cup of the pasta cooking water. Drain the pasta but don’t rinse it – you want to keep that starchy exterior to help the sauce cling to every strand.
