Chicken Stuffing Bake

  • 4 cups cooked chicken, shredded or cubed (about 1 pound)
  • 1 (6 oz) box stuffing mix (like Stove Top)
  • 1 3/4 cups chicken broth, divided
  • 1/2 cup (1 stick) butter, melted
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 cup frozen mixed vegetables (optional)
  • 1/2 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine stuffing mix with 1 1/4 cups chicken broth and melted butter. Stir just until moistened and set aside.
  3. In another bowl, mix cream of chicken soup, sour cream, remaining 1/2 cup chicken broth, garlic powder, onion powder, and black pepper until smooth.
  4. Fold cooked chicken and frozen vegetables (if using) into the soup mixture until well coated.
  5. Spread chicken mixture evenly in the prepared baking dish.
  6. Top with the stuffing mixture, spreading to cover the chicken layer completely.
  7. Cover with foil and bake for 25 minutes.
  8. Remove foil, add shredded cheese if using, and bake uncovered for an additional 10-15 minutes until golden and bubbly.
  9. Let rest for 5 minutes before serving.
