- 4 cups cooked chicken, shredded or cubed (about 1 pound)
- 1 (6 oz) box stuffing mix (like Stove Top)
- 1 3/4 cups chicken broth, divided
- 1/2 cup (1 stick) butter, melted
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 cup frozen mixed vegetables (optional)
- 1/2 cup shredded cheddar cheese (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, combine stuffing mix with 1 1/4 cups chicken broth and melted butter. Stir just until moistened and set aside.
- In another bowl, mix cream of chicken soup, sour cream, remaining 1/2 cup chicken broth, garlic powder, onion powder, and black pepper until smooth.
- Fold cooked chicken and frozen vegetables (if using) into the soup mixture until well coated.
- Spread chicken mixture evenly in the prepared baking dish.
- Top with the stuffing mixture, spreading to cover the chicken layer completely.
- Cover with foil and bake for 25 minutes.
- Remove foil, add shredded cheese if using, and bake uncovered for an additional 10-15 minutes until golden and bubbly.
- Let rest for 5 minutes before serving.
