- 4 boneless (skinless chicken breasts)
- 8 oz 225 g fresh mozzarella cheese, sliced
- 2 medium tomatoes (thinly sliced)
- 8 –10 fresh basil leaves
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp balsamic glaze for drizzling
Instructions
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Butterfly the chicken breasts: Slice each breast horizontally without cutting all the way through. Open the chicken like a book.
- Step 3: Season both sides of the chicken with salt, pepper, and Italian seasoning.
- Step 4: Layer 1–2 slices of mozzarella, 1–2 slices of tomato, and 2–3 basil leaves inside each butterflied chicken breast.
- Step 5: Close the chicken and secure it with toothpicks to prevent the filling from spilling out during cooking.
- Step 6: Heat olive oil in an oven-safe skillet over medium-high heat.
- Step 7: Add the stuffed chicken breasts and sear for 2–3 minutes per side until golden brown.
- Step 8: Transfer the skillet to the preheated oven.
- Step 9: Bake for 20–25 minutes, or until the chicken’s internal temperature reaches 165°F (74°C).
- Step 10: Remove toothpicks carefully.
- Step 11: Drizzle with balsamic glaze if desired.
- Step 12: Serve hot with your favorite sides.
