Easy Cabbage and Sausage Skillet


Description

Ingredients

  • 1 medium head green cabbage (about 23 pounds), cored and chopped into 1-inch pieces
  • 1 pound smoked sausage (kielbasa, Polish, or any smoked sausage), sliced into ¼-inch rounds
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter
  • 1 teaspoon caraway seeds (optional but recommended)
  • ½ teaspoon paprika (sweet or smoked)
  • ¼ teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons apple cider vinegar
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare all ingredients: core and chop cabbage, slice sausage into rounds, and thinly slice onion.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage slices and brown for 2-3 minutes per side until caramelized. Transfer to a plate, leaving drippings in the pan.
  3. Add remaining tablespoon of olive oil to the skillet. Add onions with a pinch of salt and cook for 3-4 minutes until translucent.
  4. Add garlic, caraway seeds, paprika, and red pepper flakes. Stir continuously for 30 seconds until fragrant.
  5. Add half the cabbage to the skillet and stir to coat with oil. Cook for 2 minutes until it begins to wilt.
  6. Add remaining cabbage and butter. Season with salt and pepper. Cook for 10-12 minutes, stirring occasionally, until cabbage is tender-crisp with some caramelized edges.
  7. Return sausage and any accumulated juices to the skillet. Fold everything together and cook for 3-4 minutes until heated through.
  8. Drizzle with apple cider vinegar and stir to incorporate. Taste and adjust seasoning if needed.
  9. Remove from heat, sprinkle with fresh parsley, and serve hot.
