Description
This cabbage and sausage skillet is the dinner hero you need – ready in 30 minutes, made in one pan, and guaranteed to have everyone asking for seconds!

- 1 medium head green cabbage (about 2–3 pounds), cored and chopped into 1-inch pieces
- 1 pound smoked sausage (kielbasa, Polish, or any smoked sausage), sliced into ¼-inch rounds
- 1 medium yellow onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil, divided
- 1 tablespoon butter
- 1 teaspoon caraway seeds (optional but recommended)
- ½ teaspoon paprika (sweet or smoked)
- ¼ teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons apple cider vinegar
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare all ingredients: core and chop cabbage, slice sausage into rounds, and thinly slice onion.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage slices and brown for 2-3 minutes per side until caramelized. Transfer to a plate, leaving drippings in the pan.
- Add remaining tablespoon of olive oil to the skillet. Add onions with a pinch of salt and cook for 3-4 minutes until translucent.
- Add garlic, caraway seeds, paprika, and red pepper flakes. Stir continuously for 30 seconds until fragrant.
- Add half the cabbage to the skillet and stir to coat with oil. Cook for 2 minutes until it begins to wilt.
- Add remaining cabbage and butter. Season with salt and pepper. Cook for 10-12 minutes, stirring occasionally, until cabbage is tender-crisp with some caramelized edges.
- Return sausage and any accumulated juices to the skillet. Fold everything together and cook for 3-4 minutes until heated through.
- Drizzle with apple cider vinegar and stir to incorporate. Taste and adjust seasoning if needed.
- Remove from heat, sprinkle with fresh parsley, and serve hot.
