Easy Baked Honey Dijon Chicken Recipe

Ingredients

  • 2 lbs (900g) boneless, skinless chicken breasts or thighs
  • 1/3 cup (80ml) honey, preferably local
  • 1/4 cup (60ml) Dijon mustard
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (30ml) soy sauce or tamari
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together honey, Dijon mustard, olive oil, soy sauce, minced garlic, apple cider vinegar, thyme, pepper, and salt until smooth.
  3. Pat chicken pieces dry with paper towels and arrange in a single layer in a baking dish.
  4. Pour about two-thirds of the honey Dijon mixture over the chicken, coating all sides. Reserve remaining sauce for basting.
  5. Bake for 20 minutes, then remove and baste with pan juices and reserved sauce.
  6. Return to oven and bake for another 10-15 minutes for breasts or 15-20 minutes for thighs, until internal temperature reaches 165°F (74°C).
  7. Optional: For more caramelization, broil for the final 2-3 minutes, watching carefully.
  8. Remove from oven and let rest for 5 minutes before serving.
  9. Spoon thickened sauce from the baking dish over the chicken and garnish with fresh parsley if desired.
