- 2 lbs (900g) boneless, skinless chicken breasts or thighs
- 1/3 cup (80ml) honey, preferably local
- 1/4 cup (60ml) Dijon mustard
- 2 tablespoons (30ml) olive oil
- 2 tablespoons (30ml) soy sauce or tamari
- 3 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon (15ml) apple cider vinegar
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons fresh chopped parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together honey, Dijon mustard, olive oil, soy sauce, minced garlic, apple cider vinegar, thyme, pepper, and salt until smooth.
- Pat chicken pieces dry with paper towels and arrange in a single layer in a baking dish.
- Pour about two-thirds of the honey Dijon mixture over the chicken, coating all sides. Reserve remaining sauce for basting.
- Bake for 20 minutes, then remove and baste with pan juices and reserved sauce.
- Return to oven and bake for another 10-15 minutes for breasts or 15-20 minutes for thighs, until internal temperature reaches 165°F (74°C).
- Optional: For more caramelization, broil for the final 2-3 minutes, watching carefully.
- Remove from oven and let rest for 5 minutes before serving.
- Spoon thickened sauce from the baking dish over the chicken and garnish with fresh parsley if desired.
