- 2 cups rolled oats (old-fashioned)
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg (or 1 flax egg for vegan option)
- 1/3 cup maple syrup (or honey)
- 1/4 cup almond butter (or any nut/seed butter)
- 1/2 teaspoon vanilla extract
- 1/2 cup milk (dairy or non-dairy)
- 1 1/4 cups diced apples (peeled or unpeeled, your choice)
- 1/4 cup chopped walnuts (raisins, or chocolate chips)
Instructions
- Step 1: Preheat oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper or lightly grease it.
- Step 2: Mix dry ingredients: In a large bowl, stir together the rolled oats, cinnamon, baking powder, and salt.
- Step 3: Combine wet ingredients: In a separate bowl, whisk the egg, maple syrup, almond butter, vanilla extract, and milk until smooth.
- Step 4: Combine mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined.
- Step 5: Fold in apples: Add the diced apples and any optional add-ins like walnuts or raisins. Stir gently to distribute evenly.
- Step 6: Transfer to pan: Pour the mixture into the prepared baking pan and spread it into an even layer.
- Step 7: Bake: Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Step 8: Cool and slice: Let cool in the pan for 10–15 minutes. Then transfer to a wire rack and cool completely before slicing into 9 bars.
