Ingredients
Scale
- 1 lb (450g) lean ground beef
- 1 packet (1 oz/28g) taco seasoning
- 1 large head romaine lettuce, chopped (about 6 cups)
- 1 cup (150g) cherry tomatoes, halved
- 1 cup (150g) black beans, rinsed and drained
- 1 cup (150g) corn kernels (fresh, frozen, or canned)
- 1 medium red onion, finely diced (about ½ cup)
- 1 large avocado, diced
- 1 cup (115g) shredded cheddar or Mexican blend cheese
- 1 large bag (9–10 oz/255-283g) Nacho Cheese Doritos
- ¾ cup (180ml) Catalina or French dressing
Instructions
- Brown ground beef in a large skillet over medium-high heat for 5-7 minutes until no pink remains. Drain excess grease.
- Add taco seasoning and ¼ cup water to beef. Simmer 3-4 minutes until water reduces and beef is well coated. Set aside to cool completely.
- Chop romaine lettuce and place in a large serving bowl. Add tomatoes, black beans, corn, and red onion.
- Add shredded cheese to the vegetable mixture and toss lightly to combine.
- Once beef has cooled completely, add it to the salad bowl with the vegetable mixture.
- Just before serving, crush half the Doritos slightly and add to the salad. Drizzle with dressing.
- Toss everything gently to coat evenly. Top with remaining whole Doritos around the edges of the bowl.
- Add diced avocado on top and serve immediately while Doritos are still crispy.
