- 2 cups (380g) uncooked long-grain white rice
- 1 (10.5 oz/298g) can cream of mushroom soup
- 1 (10.5 oz/298g) can cream of celery soup
- 1 (1 oz/28g) packet dry onion soup mix
- 2 cups (475ml) chicken broth, preferably low-sodium
- 6–8 bone-in chicken thighs or breasts (about 2–3 lbs/900-1350g)
- 2 tablespoons (30ml) butter, melted
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- In a medium bowl, mix together rice, cream of mushroom soup, cream of celery soup, onion soup mix, and chicken broth. Spread mixture evenly in prepared baking dish.
- Pat chicken pieces dry with paper towels. In a small bowl, combine melted butter, paprika, and garlic powder.
- Brush butter mixture over chicken pieces, then season with salt and pepper on both sides.
- Arrange chicken pieces evenly on top of the rice mixture.
- Cover tightly with aluminum foil, sealing the edges well.
- Bake for 1 hour and 45 minutes without opening the oven or removing the foil.
- Remove from oven and let stand, still covered, for 10 minutes.
- Uncover, fluff rice gently with a fork, and serve hot.
