- 2 cups all-purpose flour (240g)
- 1/3 cup granulated sugar (67g)
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 2 large eggs, room temperature
- 2/3 cup whole milk (160ml)
- 2 tablespoons unsalted butter, melted (28g)
- 1 teaspoon vanilla extract
- 2 cups fresh peaches, peeled and diced (about 3–4 medium peaches)
- Vegetable or canola oil for frying (about 3-4 cups)
For the glaze:
- 2 cups powdered sugar (240g)
- 1/4 cup milk (60ml)
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, beat eggs, then mix in milk, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir just until combined (batter will be slightly lumpy).
- Gently fold diced peaches into the batter and let rest for 5-10 minutes.
- Heat 2-3 inches of oil in a heavy pot to 350°F (175°C).
- Drop 1/4 cup portions of batter into hot oil, cooking 3-4 fritters at a time.
- Fry for 2-3 minutes per side until golden brown, flipping once.
- Transfer to a cooling rack set over paper towels to drain.
- Whisk together glaze ingredients until smooth.
- Dip the warm fritters into the glaze, allowing excess to drip off.
- Return to cooling rack to let glaze set before serving.
