Delicious Fresh Peach Fritters

Ingredients

  • 2 cups all-purpose flour (240g)
  • 1/3 cup granulated sugar (67g)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 large eggs, room temperature
  • 2/3 cup whole milk (160ml)
  • 2 tablespoons unsalted butter, melted (28g)
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, peeled and diced (about 34 medium peaches)
  • Vegetable or canola oil for frying (about 3-4 cups)

For the glaze:

  • 2 cups powdered sugar (240g)
  • 1/4 cup milk (60ml)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In a separate bowl, beat eggs, then mix in milk, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and stir just until combined (batter will be slightly lumpy).
  4. Gently fold diced peaches into the batter and let rest for 5-10 minutes.
  5. Heat 2-3 inches of oil in a heavy pot to 350°F (175°C).
  6. Drop 1/4 cup portions of batter into hot oil, cooking 3-4 fritters at a time.
  7. Fry for 2-3 minutes per side until golden brown, flipping once.
  8. Transfer to a cooling rack set over paper towels to drain.
  9. Whisk together glaze ingredients until smooth.
  10. Dip the warm fritters into the glaze, allowing excess to drip off.
  11. Return to cooling rack to let glaze set before serving.
