Ingredients

Scale
  • 2 cups frozen shelled edamame (defrosted)
  • 2 cups cucumber (seeds removed and diced small)
  • ⅓ cup crumbled feta cheese
  • 4 green onions (sliced thin)
  • 1 ½ Tbsp soy sauce
  • 1 ½ Tbsp chili crisp
  • 1 Tbsp sesame oil
  • 1 Tbsp rice vinegar
  • 1 Tbsp honey
  • 2 cloves garlic (minced)
  • Sesame seeds (as garnish)
  • Tortilla chips

Instructions

  1. Step 1: Add all ingredients to your mixing bowl and mix. Store in the fridge for up to four days or enjoy immediately.
  2. Step 2: Mix right before serving to incorporate any dressing that fell to the bottom of the bowl/container. Top with a sprinkle of sesame seeds, and serve with tortilla chips. This salad is meant to be scooped!
