Ingredients

Prepare the Aromatics: In a large sauté pan, melt 3 tablespoons of butter over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened and translucent. Add the garlic and cook for another 1-2 minutes until fragrant.

Combine Ingredients in the Crockpot: Transfer the sautéed onions and garlic to the Crockpot. Add the diced potatoes, broccoli florets, chicken or vegetable broth, and salt and pepper to taste. Stir to combine.
