- 2 cloves garlic, minced
- 1/4 cup (15g) fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 2 jars (24 oz/680g each) marinara sauce
- 1/4 cup (60ml) beef broth
- 1 tablespoon brown sugar (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Step 1: Prepare the Meat Mixture In a large bowl, combine the ground beef and pork with the breadcrumbs, grated Parmesan, and dried oregano. In a separate smaller bowl, whisk together the egg and milk until well combined. Add this liquid mixture to the meat along with the minced garlic, chopped parsley, salt, and pepper. Using clean hands, gently mix everything together until just combined—don’t overwork the meat or your Crockpot Meatballs will become tough.
- Step 2: Form the Meatballs Slightly dampen your hands with cold water to prevent sticking. Scoop approximately 2 tablespoons of the meat mixture and gently roll between your palms to form 1½-inch balls. Place the formed meatballs on a parchment-lined baking sheet. You should get approximately 24-30 meatballs depending on your preferred size. For extra-special slow cooker meatballs, you can refrigerate them for 30 minutes at this point to help them hold their shape.
- Step 3: Optional Browning For enhanced flavor, you can quickly brown the meatballs in a 400°F oven for 10 minutes or in a skillet with a tablespoon of oil. This step is optional but creates a nice crust that helps your Crockpot Meatballs maintain their shape during slow cooking.
