- 2 lbs boneless, skinless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- 1 tbsp olive oil
- 4 cloves garlic, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ¾ cup sun-dried tomatoes in oil, drained and chopped
- 1 tbsp cornstarch (optional)
- 2 tbsp fresh basil, chopped for garnish
Instructions
- Pat chicken breasts dry and season with salt, pepper, Italian seasoning, and red pepper flakes.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden. Transfer to crockpot.
- In the same skillet, sauté garlic for 30 seconds. Add chicken broth and scrape up browned bits. Pour over chicken.
- Add chopped sun-dried tomatoes to the crockpot. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
- With 30 minutes of cooking time left, stir in heavy cream and Parmesan cheese. For thicker sauce, mix cornstarch with 2 tbsp cold water and add to the pot.
- Check that chicken has reached 165°F. Adjust seasonings if needed. Garnish with fresh basil before serving.
