Crockpot Marry Me Chicken Recipe

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • ¾ cup sun-dried tomatoes in oil, drained and chopped
  • 1 tbsp cornstarch (optional)
  • 2 tbsp fresh basil, chopped for garnish

Instructions

  1. Pat chicken breasts dry and season with salt, pepper, Italian seasoning, and red pepper flakes.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden. Transfer to crockpot.
  3. In the same skillet, sauté garlic for 30 seconds. Add chicken broth and scrape up browned bits. Pour over chicken.
  4. Add chopped sun-dried tomatoes to the crockpot. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
  5. With 30 minutes of cooking time left, stir in heavy cream and Parmesan cheese. For thicker sauce, mix cornstarch with 2 tbsp cold water and add to the pot.
  6. Check that chicken has reached 165°F. Adjust seasonings if needed. Garnish with fresh basil before serving.
