- 1 lb large shrimp, peeled and deveined
- 8 oz penne pasta (or any pasta of choice)
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional for heat)
- 1 bell pepper, sliced
- 1/2 red onion, thinly sliced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 4 oz cream cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Step 1: In a bowl, toss shrimp with olive oil, Cajun seasoning, paprika, garlic powder, cayenne pepper, and a pinch of salt. Set aside.
- Step 2: Add bell pepper, onion, garlic, and diced tomatoes to the bottom of the slow cooker.
- Step 3: Top with cream cheese and pour in heavy cream. Do not stir.
- Step 4: Cover and cook on LOW for 3 hours.
- Step 5: Stir the sauce gently to combine, then add shrimp to the slow cooker. Cover and cook for another 30 minutes until shrimp are pink and cooked through.
- Step 6: While shrimp cooks, boil pasta according to package directions. Drain and set aside.
- Step 7: Once shrimp is cooked, stir in Parmesan cheese. Add cooked pasta and toss to coat evenly in the creamy Cajun sauce.
- Step 8: Serve hot, garnished with chopped parsley.
