Description

Crockpot Cheesy Potatoes and Kielbasa. Easy, comforting recipe with potatoes, kielbasa, and gooey cheese. Perfect for a crowd!

Ingredients

Scale
  • 2 lbs (900g) russet potatoes, peeled and diced into ½-inch cubes
  • 14 oz (400g) kielbasa sausage, sliced into ¼-inch rounds
  • 2 cups (8 oz/225g) shredded cheddar cheese (medium or sharp)
  • 1 medium onion (about 1 cup/160g), diced
  • 1 can (10.5 oz/300g) condensed cream of chicken soup
  • ½ cup (120ml) chicken broth
  • ¼ cup (60g) sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon (15g) butter, melted
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika (smoked paprika works wonderfully)
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Step 1: Prepare Your Ingredients Begin by peeling and cutting your potatoes into uniform ½-inch cubes. Place them in cold water for about 30 minutes to remove excess starch, then drain thoroughly and pat dry with paper towels. Meanwhile, slice your kielbasa into ¼-inch rounds. In a small bowl, combine the cream of chicken soup, chicken broth, sour cream, minced garlic, melted butter, dried parsley, paprika, salt, and pepper. Whisk until smooth and set aside.
  2. Step 2: Brown the Kielbasa (Optional but Recommended) Heat a large skillet over medium-high heat. Add the kielbasa slices and brown for about 2-3 minutes per side until they develop a caramelized exterior. This step isn’t strictly necessary, but it adds incredible depth of flavor to your Crockpot Cheesy Potatoes and Kielbasa.
  3. Step 3: Layer Your Ingredients Lightly grease your slow cooker with cooking spray or butter. Add half of the potatoes in an even layer, followed by half of the diced onion. Place half of the browned kielbasa on top, then pour half of the soup mixture over everything. Sprinkle with 1 cup of the shredded cheese. Repeat the layers with the remaining ingredients, finishing with the remaining cheese on top.
  4. Step 4: Cook to Perfection Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The dish is ready when the potatoes are fork-tender but still hold their shape. Avoid the temptation to lift the lid during cooking, as this releases heat and can increase cooking time.
  5. Step 5: Serve and Enjoy Once cooking is complete, let your Crockpot Cheesy Potatoes and Kielbasa rest for about 10 minutes before serving. This allows everything to set slightly and makes serving easier. Garnish with chopped green onions or fresh parsley if desired, and enjoy this comforting, cheesy delight!
