Crock Pot Tuscan Garlic Chicken

This Crock Pot Tuscan Garlic Chicken simmers all day so you can come home to a restaurant-worthy dinner that tastes like you spent hours in the kitchen instead of minutes at the slow cooker.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, julienned (oil-packed, drained)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened and cubed
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cups fresh spinach, roughly chopped
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Season chicken breasts with salt and pepper on both sides. Optionally, sear in olive oil for 2-3 minutes per side until golden brown.
  2. Transfer chicken to slow cooker. Add minced garlic, sun-dried tomatoes, and Italian seasoning. Pour chicken broth around the chicken.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken reaches 165°F internal temperature.
  4. Add cubed cream cheese to the slow cooker. Cover and let soften for 10 minutes, then whisk into the cooking liquid until smooth.
  5. Add heavy cream and Parmesan cheese. Stir to combine into a smooth sauce.
  6. Add fresh spinach and fold gently until it begins to wilt, about 5-10 minutes.
  7. Taste and adjust seasoning as needed with additional salt, pepper, or red pepper flakes.
  8. Serve immediately over pasta, rice, or with crusty bread.
