This Crock Pot Tuscan Garlic Chicken simmers all day so you can come home to a restaurant-worthy dinner that tastes like you spent hours in the kitchen instead of minutes at the slow cooker.

- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 6 cloves garlic, minced (about 2 tablespoons)
- 1 cup chicken broth
- 1/2 cup sun-dried tomatoes, julienned (oil-packed, drained)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces cream cheese, softened and cubed
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cups fresh spinach, roughly chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Season chicken breasts with salt and pepper on both sides. Optionally, sear in olive oil for 2-3 minutes per side until golden brown.
- Transfer chicken to slow cooker. Add minced garlic, sun-dried tomatoes, and Italian seasoning. Pour chicken broth around the chicken.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken reaches 165°F internal temperature.
- Add cubed cream cheese to the slow cooker. Cover and let soften for 10 minutes, then whisk into the cooking liquid until smooth.
- Add heavy cream and Parmesan cheese. Stir to combine into a smooth sauce.
- Add fresh spinach and fold gently until it begins to wilt, about 5-10 minutes.
- Taste and adjust seasoning as needed with additional salt, pepper, or red pepper flakes.
- Serve immediately over pasta, rice, or with crusty bread.
