Crock Pot Creamy Cajun Chicken Pasta

Description

The slow cooker does all the work in this creamy, spicy Cajun chicken pasta that’ll have everyone coming back for seconds.


Ingredients

  • lbs boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 medium onion, diced
  • 1 red bell pepper, sliced into strips
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 8 oz cream cheese, softened and cubed
  • ½ cup heavy cream
  • 12 oz penne pasta
  • ½ cup freshly grated Parmesan cheese
  • 3 green onions, chopped for garnish
  • Salt and pepper to taste

Instructions

  1. Season chicken with half the Cajun seasoning and place in slow cooker with onion, bell pepper, and garlic.
  2. Pour chicken broth and diced tomatoes over chicken mixture. Cook on low for 5-6 hours or high for 3 hours.
  3. Remove chicken, shred with two forks, then return to slow cooker.
  4. Add cream cheese, stir until melted (about 15 minutes), then add heavy cream and remaining Cajun seasoning.
  5. Cook pasta separately until al dente (1-2 minutes less than package directions).
  6. Add cooked pasta and Parmesan cheese to slow cooker, stir to combine.
  7. Let sit for 5 minutes before serving. Garnish with green onions.
