Description
The slow cooker does all the work in this creamy, spicy Cajun chicken pasta that’ll have everyone coming back for seconds.

- 1½ lbs boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 medium onion, diced
- 1 red bell pepper, sliced into strips
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 8 oz cream cheese, softened and cubed
- ½ cup heavy cream
- 12 oz penne pasta
- ½ cup freshly grated Parmesan cheese
- 3 green onions, chopped for garnish
- Salt and pepper to taste
Instructions
- Season chicken with half the Cajun seasoning and place in slow cooker with onion, bell pepper, and garlic.
- Pour chicken broth and diced tomatoes over chicken mixture. Cook on low for 5-6 hours or high for 3 hours.
- Remove chicken, shred with two forks, then return to slow cooker.
- Add cream cheese, stir until melted (about 15 minutes), then add heavy cream and remaining Cajun seasoning.
- Cook pasta separately until al dente (1-2 minutes less than package directions).
- Add cooked pasta and Parmesan cheese to slow cooker, stir to combine.
- Let sit for 5 minutes before serving. Garnish with green onions.
