- 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup bourbon whiskey
- 1/2 cup low-sodium soy sauce
- 1/4 cup apple cider vinegar
- 3/4 cup brown sugar, packed
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 teaspoon red pepper flakes
- 1/2 cup apple juice
- 2 tablespoons ketchup
- 3 tablespoons cornstarch
- 3 tablespoons water
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a medium bowl, whisk together bourbon, soy sauce, apple cider vinegar, brown sugar, garlic, ginger, red pepper flakes, apple juice, and ketchup until sugar is mostly dissolved.
- Pat chicken pieces dry with paper towels and place them in the bottom of your slow cooker in an even layer.
- Pour the sauce mixture over the chicken, ensuring all pieces are well coated. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, mix cornstarch with water until smooth to create a slurry. Stir this into the slow cooker, increase heat to high (if not already), and cook for an additional 20-30 minutes until sauce thickens.
- Once sauce reaches desired thickness, stir everything well. Serve over steamed rice or noodles, garnished with sliced green onions and sesame seeds.
