  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup bourbon whiskey
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup apple cider vinegar
  • 3/4 cup brown sugar, packed
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup apple juice
  • 2 tablespoons ketchup
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a medium bowl, whisk together bourbon, soy sauce, apple cider vinegar, brown sugar, garlic, ginger, red pepper flakes, apple juice, and ketchup until sugar is mostly dissolved.
  2. Pat chicken pieces dry with paper towels and place them in the bottom of your slow cooker in an even layer.
  3. Pour the sauce mixture over the chicken, ensuring all pieces are well coated. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, mix cornstarch with water until smooth to create a slurry. Stir this into the slow cooker, increase heat to high (if not already), and cook for an additional 20-30 minutes until sauce thickens.
  5. Once sauce reaches desired thickness, stir everything well. Serve over steamed rice or noodles, garnished with sliced green onions and sesame seeds.
