- 2 large sweet potatoes (about 1.5 pounds or 680g), scrubbed clean
- 2 tablespoons (30ml) olive oil or avocado oil
- 2 teaspoons (10g) cornstarch
- 1 teaspoon (5g) garlic powder
- 1 teaspoon (5g) paprika (sweet or smoked)
- ½ teaspoon (2.5g) salt
- ¼ teaspoon (1.25g) black pepper
- Optional: ¼ teaspoon (1.25g) cayenne pepper for heat

- Step 1: Prepare the Sweet Potatoes Preheat your oven to 425°F (220°C) and position racks in the upper and lower thirds. Wash and scrub the sweet potatoes thoroughly, leaving the skin on for extra nutrition and texture. Using a sharp knife, cut each potato in half lengthwise, then into ¼-inch thick planks, and finally into sticks of equal thickness. Place the cut sweet potatoes in a large bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
- Step 2: Dry and Season Drain the sweet potatoes and pat them completely dry with paper towels or a clean kitchen towel. Any moisture left will prevent them from crisping properly. Transfer the dried fries to a large bowl and sprinkle with cornstarch, tossing until lightly coated. The cornstarch creates a thin barrier that helps achieve crispiness. In a small bowl, combine the garlic powder, paprika, salt, black pepper, and cayenne (if using). Drizzle the oil over the fries and toss to coat evenly, then sprinkle with the seasoning mixture and toss again until every piece is well seasoned.
