Crispy Fried Zucchini Sticks


Description

These crispy, golden zucchini sticks will vanish faster than you can make them. With that perfect crunch and tender interior, they’re seriously addictive finger food!


Ingredients

  • 4 medium zucchini (about 2 pounds)
  • 2 cups panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying (about 2 cups)

Instructions

  1. Cut zucchini into sticks about 1/2-inch thick and 3-4 inches long. Place on paper towels, sprinkle lightly with salt, and let sit for 15-20 minutes. Pat completely dry.
  2. Set up breading station: Place flour with a pinch of salt and pepper in one dish. Beat eggs in a second dish. In a third dish, combine panko, Parmesan, and all seasonings.
  3. Working with a few sticks at a time, dredge zucchini in flour, dip in egg, then coat thoroughly with breadcrumb mixture, pressing gently to adhere.
  4. Heat 1/2 inch of oil in a large skillet to 350-375°F.
  5. Fry zucchini sticks in small batches for 2-3 minutes per side until golden brown and crispy.
  6. Transfer to paper towel-lined plate to drain. Sprinkle with a touch of salt while hot.
  7. Serve immediately with your favorite dipping sauce.
