These crispy, golden zucchini sticks will vanish faster than you can make them. With that perfect crunch and tender interior, they’re seriously addictive finger food!

- 4 medium zucchini (about 2 pounds)
- 2 cups panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying (about 2 cups)
Instructions
- Cut zucchini into sticks about 1/2-inch thick and 3-4 inches long. Place on paper towels, sprinkle lightly with salt, and let sit for 15-20 minutes. Pat completely dry.
- Set up breading station: Place flour with a pinch of salt and pepper in one dish. Beat eggs in a second dish. In a third dish, combine panko, Parmesan, and all seasonings.
- Working with a few sticks at a time, dredge zucchini in flour, dip in egg, then coat thoroughly with breadcrumb mixture, pressing gently to adhere.
- Heat 1/2 inch of oil in a large skillet to 350-375°F.
- Fry zucchini sticks in small batches for 2-3 minutes per side until golden brown and crispy.
- Transfer to paper towel-lined plate to drain. Sprinkle with a touch of salt while hot.
- Serve immediately with your favorite dipping sauce.
