  • 34 boneless, skinless chicken breasts (cooked and diced)
  • 8 oz cream cheese (full-fat)
  • 1 cup shredded cheddar cheese
  • 1/2 cup jalapeños (fresh or pickled, chopped)
  • 8 flour tortillas (6-inch)
  • 2 tbsp olive oil (for brushing)
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Step 1 – Preheat the Oven. Preheat your oven to 400°F (200°C).
  2. Step 2 – Prepare the Filling. In a bowl, mix the diced chicken, cream cheese, cheddar cheese, jalapeños, cumin, and garlic powder until well combined.
  3. Step 3 – Assemble the Taquitos. Take a tortilla and spoon about two tablespoons of the filling onto one side. Roll it tightly while tucking in the edges. Place seam-side down on a greased baking sheet.
  4. Step 4 – Brush with Oil. Lightly brush each rolled taquito with olive oil to help them turn golden while baking.
  5. Step 5 – Bake.  Bake for 15–20 minutes until golden brown and crispy.
  6. Step 6 – Serve . Serve warm with sour cream or guacamole.
