Ingredients
Scale
- 4 large (10-inch/25cm) flour tortillas
- 8 oz (226g) cream cheese, softened
- 1 tbsp (15ml) ranch seasoning
- 2 cups (200g) fresh spinach leaves
- 1 large red bell pepper, thinly sliced
- 1 medium cucumber, cut into thin matchsticks
- 1 large carrot, julienned or shredded
- 8 small black olives, sliced in half
- 1/4 cup (30g) shredded cheddar cheese (optional)
- 2 tbsp (30ml) Greek yogurt
- Salt and pepper to taste
Instructions
- Mix softened cream cheese with ranch seasoning, salt, and pepper in a medium bowl until smooth.
- Lay each tortilla flat and warm for 10-15 seconds in the microwave. Using kitchen scissors, cut 1/2-inch strips along both sides of each tortilla, leaving about 3 inches uncut in the center.
- Spread 2 tablespoons of cream cheese mixture down the uncut center portion of each tortilla.
- Layer spinach leaves down the center, followed by bell pepper strips, cucumber matchsticks, and shredded carrot. Sprinkle with cheese if using.
- Fold up the bottom edge of the tortilla, then criss-cross the cut strips over the filling, alternating sides to create a mummy-wrapped appearance. Leave a gap near the top for eyes.
- Place two olive halves in the gap for eyes, pressing gently into the cream cheese to secure.
- Serve immediately or wrap individually in plastic wrap and refrigerate for up to 4 hours.
