Creamy Souper Rice

This Creamy Souper Rice is your answer to “what’s for dinner?” when you need something cozy, quick, and downright delicious – one pot, minimal effort, maximum comfort!


Ingredients

  • 1½ cups long-grain white rice (jasmine or basmati)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • ½ cup carrots, diced small
  • ½ cup celery, diced small
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ¼ teaspoon white pepper
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onions and cook for 5-7 minutes until translucent and slightly caramelized.
  2. Add minced garlic and sauté for 30 seconds until fragrant. Add mushrooms, carrots, and celery, cooking for 3-4 minutes until slightly softened.
  3. Stir in dried thyme and rosemary, then add rice. Toast for 2 minutes, stirring continuously.
  4. Pour in broth and half of the heavy cream. Season with white pepper and a pinch of salt. Bring to a gentle boil, then reduce heat to low.
  5. Cover and simmer for 15 minutes, stirring occasionally to prevent sticking.
  6. Add the remaining heavy cream and continue cooking uncovered for 5-7 minutes until rice is tender and mixture has a creamy consistency.
  7. Remove from heat and let rest for 5 minutes. Taste and adjust seasoning.
  8. Serve in warm bowls, garnished with fresh parsley and Parmesan cheese if desired.
