- 1½ cups long-grain white rice (jasmine or basmati)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 1 cup mushrooms, sliced
- ½ cup carrots, diced small
- ½ cup celery, diced small
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- ¼ teaspoon white pepper
- Salt to taste
- 2 tablespoons fresh parsley, chopped
- ¼ cup grated Parmesan cheese (optional)
Instructions
- Melt butter in a large pot over medium heat. Add diced onions and cook for 5-7 minutes until translucent and slightly caramelized.
- Add minced garlic and sauté for 30 seconds until fragrant. Add mushrooms, carrots, and celery, cooking for 3-4 minutes until slightly softened.
- Stir in dried thyme and rosemary, then add rice. Toast for 2 minutes, stirring continuously.
- Pour in broth and half of the heavy cream. Season with white pepper and a pinch of salt. Bring to a gentle boil, then reduce heat to low.
- Cover and simmer for 15 minutes, stirring occasionally to prevent sticking.
- Add the remaining heavy cream and continue cooking uncovered for 5-7 minutes until rice is tender and mixture has a creamy consistency.
- Remove from heat and let rest for 5 minutes. Taste and adjust seasoning.
- Serve in warm bowls, garnished with fresh parsley and Parmesan cheese if desired.
