- 2 lbs beef chuck roast (cut into 1-inch cubes)
- 1 lb mushrooms (sliced)
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup sour cream
- 8 oz egg noodles
Instructions
- Step 1: Season the beef cubes generously with salt and pepper.
- Step 2: Optional but recommended: Brown the beef in a skillet over high heat. This adds extra flavor!
- Step 3: Add the beef, mushrooms, onion, and garlic to your slow cooker.
- Step 4: In a bowl, whisk together the beef broth, Worcestershire sauce, Dijon mustard, and thyme. Pour this mixture over the ingredients in the slow cooker.
- Step 5: Cover and cook on low for 7-8 hours or on high for 4-5 hours.
- Step 6: About 30 minutes before serving, stir in the sour cream until well combined.
- Step 7: Cook the egg noodles according to package instructions.
- Step 8: Serve the beef stroganoff over the cooked noodles and garnish with fresh parsley if desired.
