Creamy Sausage and Peppers Pasta

Ingredients

  • 1 lb (450g) penne pasta
  • 1 lb (450g) Italian sausage, casings removed
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 medium onion, thinly sliced
  • 4 garlic cloves, minced
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) chicken broth
  • 1/2 cup (50g) grated Parmesan cheese, plus more for serving
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup pasta water before draining.
  2. Heat olive oil in a large skillet over medium-high heat. Add Italian sausage, breaking it up while cooking until browned (5-7 minutes).
  3. Add sliced onions and cook for 2-3 minutes until softening, then add bell peppers and cook for another 3-4 minutes.
  4. Add minced garlic, Italian seasoning, and red pepper flakes. Cook for 30 seconds until fragrant.
  5. Reduce heat to medium-low and pour in chicken broth, scraping up any browned bits. Simmer for 2 minutes.
  6. Add heavy cream, stir well, and simmer gently for 3-4 minutes until slightly thickened. Season with salt and pepper.
  7. Add drained pasta to the skillet and toss to coat. Add reserved pasta water if needed to thin the sauce.
  8. Remove from heat and stir in Parmesan cheese until melted and smooth.
  9. Serve immediately, garnished with additional Parmesan and fresh herbs.
