Ingredients
Scale
- 2 boneless, skinless chicken breasts (cooked and diced)
- 8 ounces penne or rotini pasta (uncooked)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 ½ cups grated Parmesan cheese
- 1 cup shredded mozzarella cheese (for topping)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
- Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken with salt, pepper, and garlic powder. Add the chicken to the skillet and cook for 6-8 minutes, turning occasionally, until golden brown and cooked through. Remove from the skillet and set aside.
- Make the Sauce: In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant. Add the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and cook for 3-4 minutes until the sauce thickens. Add the Parmesan cheese, garlic powder, onion powder, and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
- Assemble the Casserole: In a large mixing bowl, combine the cooked pasta, sautéed chicken, and creamy garlic Parmesan sauce. Stir to coat the ingredients evenly, then transfer the mixture to the prepared baking dish.
- Top with Cheese: Sprinkle the shredded mozzarella cheese evenly over the casserole.
- Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly. If you prefer a crispier top, broil the casserole for 2-3 minutes.
- Serve: Remove the casserole from the oven and let it cool for a few minutes before serving. Garnish with freshly chopped parsley, if desired.
