  • 8 ounces penne or rotini pasta (uncooked)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 ½ cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (for topping)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
  2. Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken with salt, pepper, and garlic powder. Add the chicken to the skillet and cook for 6-8 minutes, turning occasionally, until golden brown and cooked through. Remove from the skillet and set aside.
  4. Make the Sauce: In the same skillet, add the minced garlic and sauté for 1-2 minutes, until fragrant. Add the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and cook for 3-4 minutes until the sauce thickens. Add the Parmesan cheese, garlic powder, onion powder, and Italian seasoning. Stir until the cheese is melted and the sauce is smooth.
  5. Assemble the Casserole: In a large mixing bowl, combine the cooked pasta, sautéed chicken, and creamy garlic Parmesan sauce. Stir to coat the ingredients evenly, then transfer the mixture to the prepared baking dish.
