- 10 oz (285g) penne or fettuccine pasta
- 1 lb (450g) chicken breast, sliced
- 2 tbsp olive oil
- 3 bell peppers (varied colors), sliced
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup (240ml) heavy cream
- ½ cup (120ml) chicken broth
- ½ cup (50g) cheddar, shredded
- ½ cup (50g) mozzarella, shredded
- Juice of ½ lime
- Fresh cilantro (optional)
Instructions

Boil pasta in salted water to enhance flavor absorption. Drain and set aside.

Toss chicken with spices. Sear in olive oil until golden and cooked through. Remove.

Sauté peppers and onions until tender-crisp. Add garlic.

Deglaze pan with broth. Stir in cream. Simmer gently.
