Ingredients
Scale
- 4 boneless, skinless chicken breasts (about 2 pounds/900g)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- 1 cup (100g) freshly grated Parmesan cheese
- 6 cups (180g) fresh spinach, roughly chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- ½ teaspoon salt, plus more for seasoning chicken
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Step 1: Prepare the Chicken Season both sides of the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering. Place chicken breasts in the hot pan and sear undisturbed for 5-6 minutes until golden brown. Flip and cook for another 5-6 minutes until the internal temperature reaches 165°F (74°C). Transfer chicken to a clean plate and tent loosely with foil to keep warm.
- Step 2: Start the Sauce In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and cook for 30 seconds until fragrant but not browned. Pour in chicken broth, scraping the bottom of the pan with a wooden spoon to release all those flavorful browned bits (that’s where the magic happens!).
- Step 3: Create the Creamy Base Add heavy cream, Italian seasoning, red pepper flakes, salt, and pepper to the skillet. Stir to combine and bring to a gentle simmer. Let the sauce reduce slightly for about 3-4 minutes, stirring occasionally.
- Step 4: Add Cheese and Spinach Reduce heat to low and gradually whisk in the Parmesan cheese until completely melted and smooth. Add the chopped spinach in batches, stirring between additions until wilted. This should take about 2 minutes. The sauce will thicken further as the spinach releases its moisture and then reduces.
- Step 5: Finish and Serve Return the chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over each piece and allow to simmer for 1-2 minutes until chicken is warmed through. Finish with fresh lemon juice for brightness, sprinkle with chopped parsley, and serve immediately with your favorite sides. Your Creamy Chicken Breast in Spinach Parmesan Sauce is ready to impress!
