  • Onion: 1 medium, chopped – Adds flavor and depth to the casserole.

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish with butter or non-stick spray.
  2. Cook the Rice: In a separate pot, cook the rice according to package instructions. Once cooked, set it aside.
  3. Prepare the Chicken: In a large skillet, heat 2 tablespoons of butter over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and sauté for another 1-2 minutes until fragrant. Add the cooked chicken to the skillet and stir to combine with the onions and garlic. Set aside.
  4. Make the Sauce: In a separate bowl, whisk together the chicken broth and heavy cream. Add salt and pepper to taste. Pour the sauce mixture into the skillet with the chicken, and stir to combine. Let it simmer for 5-7 minutes, allowing the flavors to meld.
  5. Combine the Ingredients: In the prepared casserole dish, combine the cooked rice, chicken mixture, and half of the shredded cheddar cheese. Stir everything together until evenly combined. Spread the mixture evenly in the dish.
  6. Bake the Casserole: Sprinkle the remaining cheddar cheese on top of the casserole. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
