- 2 cups (400g) long-grain white rice, rinsed and drained
- 4 cups (950ml) chicken broth
- 2 tablespoons (28g) unsalted butter
- 1 medium onion (about 1 cup/150g), finely diced
- 2 cloves garlic (about 2 teaspoons/6g), minced
- 8 oz (225g) cream cheese, softened and cubed
- 2 cups (200g) sharp cheddar cheese, freshly grated
- 1 cup (240ml) whole milk
- ½ cup (120ml) heavy cream
- 1 teaspoon (5g) salt
- ½ teaspoon (2g) black pepper
- 2 tablespoons fresh chives or parsley, chopped (optional garnish)
Instructions
- Melt butter in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until soft and translucent.
- Add minced garlic and cook for 30 seconds until fragrant.
- Add rinsed rice to the pot and stir for 1-2 minutes to toast slightly.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes until rice is just tender.
- Without removing from pot, stir in milk and heavy cream.
- Remove pot from heat. Add cream cheese cubes and stir until beginning to melt.
- Gradually add grated cheddar cheese in three batches, stirring between additions until fully melted.
- Season with salt and pepper to taste.
- Cover and let rest for 5 minutes to allow the flavors to meld.
- Stir gently before serving and garnish with chopped fresh herbs if desired.
