Creamy Cheesy Rice recipe

Creamy, cheesy rice that’s ready in 30 minutes? This is the ultimate comfort food side dish that will make even plain chicken seem fancy.


Ingredients

  • 2 cups (400g) long-grain white rice, rinsed and drained
  • 4 cups (950ml) chicken broth
  • 2 tablespoons (28g) unsalted butter
  • 1 medium onion (about 1 cup/150g), finely diced
  • 2 cloves garlic (about 2 teaspoons/6g), minced
  • 8 oz (225g) cream cheese, softened and cubed
  • 2 cups (200g) sharp cheddar cheese, freshly grated
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) heavy cream
  • 1 teaspoon (5g) salt
  • ½ teaspoon (2g) black pepper
  • 2 tablespoons fresh chives or parsley, chopped (optional garnish)

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until soft and translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add rinsed rice to the pot and stir for 1-2 minutes to toast slightly.
  4. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes until rice is just tender.
  5. Without removing from pot, stir in milk and heavy cream.
  6. Remove pot from heat. Add cream cheese cubes and stir until beginning to melt.
  7. Gradually add grated cheddar cheese in three batches, stirring between additions until fully melted.
  8. Season with salt and pepper to taste.
  9. Cover and let rest for 5 minutes to allow the flavors to meld.
  10. Stir gently before serving and garnish with chopped fresh herbs if desired.
