- 1½ pounds (680g) ground beef
- 1 medium onion, finely diced (about 1 cup)
- 2 cloves garlic, minced
- 1 packet (1.25 oz/35g) taco seasoning
- 1 can (15 oz/425g) black beans, drained and rinsed
- 1 can (15 oz/425g) refried beans
- 1 can (10 oz/285g) diced tomatoes with green chilies
- 8 large flour tortillas (10-inch diameter)
- 2 cups (16 oz/450g) sour cream
- 1 can (10.5 oz/300g) condensed cream of chicken soup
- 1 can (4 oz/113g) diced green chilies
- 3 cups (12 oz/340g) shredded Mexican cheese blend, divided
Instructions
- Step 1: Prepare the Meat Mixture Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, brown the ground beef, breaking it into small crumbles as it cooks. When the beef is about halfway done, add the diced onion and continue cooking until the meat is no longer pink and the onions are translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant. Add the taco seasoning and ¼ cup water, stirring to coat the meat evenly. Let simmer for 2 minutes until slightly thickened.
- Step 2: Prepare the Bean Mixture In a medium bowl, combine the refried beans and black beans, mixing well to create a spreadable consistency. This creates a protein-rich layer that helps bind the casserole together while adding hearty texture.
- Step 3: Create the Creamy Sauce In another bowl, whisk together the sour cream, condensed cream of chicken soup, and diced green chilies until smooth and well combined. This velvety mixture is what transforms this from a standard burrito bake into our Creamy Burrito Casserole. Set aside 1 cup of this mixture for topping.
- Step 4: Begin Assembly Spread about ¼ cup of the creamy sauce mixture on the bottom of a 9×13-inch baking dish to prevent sticking. Layer 4 tortillas on the bottom, overlapping as needed to cover the entire surface. Spread half of the bean mixture over the tortillas, followed by half of the seasoned meat mixture. Add the diced tomatoes with green chilies in an even layer. Pour half of the remaining creamy sauce over this layer, then sprinkle with 1 cup of the shredded cheese.
- Step 5: Complete the Layers and Bake Create a second layer with the remaining 4 tortillas, followed by the remaining bean mixture and meat mixture. Pour the remaining cream sauce (excluding the reserved cup) over the top. Spread the reserved cup of creamy sauce over everything, then sprinkle with the remaining 2 cups of cheese. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and beginning to brown at the edges. Allow to rest for 10 minutes before serving to set properly.
