Ingredients
Scale
- 1 pound (450g) Italian sausage, casings removed (sweet or hot, based on preference)
- 2 tablespoons olive oil
- 1 large onion, diced (about 1 cup)
- 3 cloves garlic, minced
- 2 medium carrots, diced (about ¾ cup)
- 2 celery stalks, diced (about ½ cup)
- 1½ pounds (680g) russet potatoes, peeled and diced into ½-inch cubes
- 1 teaspoon dried Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 6 cups (1.4 liters) chicken broth
- 1 cup (240ml) heavy cream
- 3 cups (90g) fresh kale or spinach, chopped
- Salt and freshly ground black pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- Step 1: Brown the Sausage Heat a large Dutch oven or soup pot over medium-high heat. Add the Italian sausage, breaking it apart with a wooden spoon as it cooks. Brown the sausage thoroughly for 6-8 minutes until no pink remains and some pieces are crispy. Transfer the cooked sausage to a paper towel-lined plate, leaving about 1 tablespoon of rendered fat in the pot.
- Step 2: Sauté the Aromatics Add olive oil to the pot with the sausage drippings. Once hot, add the diced onions and cook for 3-4 minutes until translucent. Add the garlic and sauté for another 30 seconds until fragrant. Then add carrots and celery, cooking for an additional 4 minutes until they begin to soften.
- Step 3: Build the Soup Base Return the browned sausage to the pot and add the diced potatoes, dried Italian seasoning, and red pepper flakes if using. Stir everything together, allowing the potatoes to pick up all those flavorful oils and spices for about 2 minutes.
- Step 4: Simmer to Perfection Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat to maintain a gentle simmer. Cover partially and cook for 15-20 minutes, or until the potatoes are fork-tender but not falling apart.
- Step 5: Add Finishing Touches Reduce heat to low. Slowly stir in the heavy cream and add the chopped kale or spinach. Simmer gently for an additional 5 minutes until the greens are wilted and the flavors have melded. Taste and adjust seasoning with salt and pepper as needed.
- Step 6: Serve and Garnish Ladle your Cozy Italian Sausage and Potato Soup into warm bowls. Top each serving with a generous sprinkle of freshly grated Parmesan cheese and serve immediately with crusty bread for the perfect meal.
