- 2 cups (450g) cottage cheese (4% milkfat recommended)
- ¼ cup (60ml) milk or pasta cooking water
- 2 tablespoons (30g) unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon dried Italian herbs (or 1 tablespoon fresh herbs)
- ½ cup (50g) freshly grated Parmesan cheese
- ¼ teaspoon freshly ground black pepper
- Salt to taste
- 1 pound (450g) pasta of your choice
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
- While pasta cooks, combine cottage cheese, milk, garlic, herbs, salt, and pepper in a food processor or blender. Blend until completely smooth and creamy.
- Return the empty pasta pot to medium-low heat and melt the butter.
- Add drained pasta back to the pot with the melted butter and toss to coat.
- Reduce heat to low and pour in the blended cottage cheese mixture, stirring gently to combine.
- Add splashes of reserved pasta water as needed to reach desired consistency.
- Sprinkle in Parmesan cheese and stir until melted and sauce evenly coats the pasta.
- Remove from heat and let rest for 1-2 minutes before serving.
- Garnish with additional Parmesan, black pepper, or fresh herbs if desired.
