Cottage Cheese Pasta Sauce

Ingredients

  • 2 cups (450g) cottage cheese (4% milkfat recommended)
  • ¼ cup (60ml) milk or pasta cooking water
  • 2 tablespoons (30g) unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (or 1 tablespoon fresh herbs)
  • ½ cup (50g) freshly grated Parmesan cheese
  • ¼ teaspoon freshly ground black pepper
  • Salt to taste
  • 1 pound (450g) pasta of your choice

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, combine cottage cheese, milk, garlic, herbs, salt, and pepper in a food processor or blender. Blend until completely smooth and creamy.
  3. Return the empty pasta pot to medium-low heat and melt the butter.
  4. Add drained pasta back to the pot with the melted butter and toss to coat.
  5. Reduce heat to low and pour in the blended cottage cheese mixture, stirring gently to combine.
  6. Add splashes of reserved pasta water as needed to reach desired consistency.
  7. Sprinkle in Parmesan cheese and stir until melted and sauce evenly coats the pasta.
  8. Remove from heat and let rest for 1-2 minutes before serving.
  9. Garnish with additional Parmesan, black pepper, or fresh herbs if desired.
