  • 4 pounds (1.8 kg) boneless, skinless chicken thighs
  • ¼ cup (60 ml) vegetable oil
  • 3 tablespoons (45 ml) fresh lime juice
  • 2 tablespoons (30 ml) fresh lemon juice
  • 3 chipotle peppers in adobo sauce, plus 2 tablespoons of the sauce
  • 1 tablespoon (9 g) ground cumin
  • 2 teaspoons (6 g) dried oregano
  • 2 teaspoons (12 g) kosher salt
  • 1 teaspoon (2 g) black pepper
  • 1 teaspoon (3 g) garlic powder
  • 1 teaspoon (3 g) onion powder
  • 2 tablespoons (30 ml) avocado or vegetable oil (for cooking)

Instructions

  1. Combine vegetable oil, lime juice, lemon juice, chipotle peppers with adobo sauce, cumin, oregano, salt, black pepper, garlic powder, and onion powder in a blender. Blend until smooth to create the marinade.
  2. Place chicken thighs in a ziplock bag or container and pour marinade over them, ensuring all pieces are coated. Seal and refrigerate for at least 4 hours, preferably overnight.
  3. Remove chicken from refrigerator 15-20 minutes before cooking. Heat a large cast-iron skillet over medium-high heat with cooking oil.
  4. Cook chicken pieces for 5-7 minutes per side until charred and internal temperature reaches 165°F (74°C). Work in batches if needed to avoid overcrowding.
  5. Transfer cooked chicken to a cutting board and let rest for 5-10 minutes.
  6. Chop chicken into ½-inch bite-sized pieces and serve in burritos, bowls, tacos, or salads.
