- 4 pounds (1.8 kg) boneless, skinless chicken thighs
- ¼ cup (60 ml) vegetable oil
- 3 tablespoons (45 ml) fresh lime juice
- 2 tablespoons (30 ml) fresh lemon juice
- 3 chipotle peppers in adobo sauce, plus 2 tablespoons of the sauce
- 1 tablespoon (9 g) ground cumin
- 2 teaspoons (6 g) dried oregano
- 2 teaspoons (12 g) kosher salt
- 1 teaspoon (2 g) black pepper
- 1 teaspoon (3 g) garlic powder
- 1 teaspoon (3 g) onion powder
- 2 tablespoons (30 ml) avocado or vegetable oil (for cooking)
Instructions
- Combine vegetable oil, lime juice, lemon juice, chipotle peppers with adobo sauce, cumin, oregano, salt, black pepper, garlic powder, and onion powder in a blender. Blend until smooth to create the marinade.
- Place chicken thighs in a ziplock bag or container and pour marinade over them, ensuring all pieces are coated. Seal and refrigerate for at least 4 hours, preferably overnight.
- Remove chicken from refrigerator 15-20 minutes before cooking. Heat a large cast-iron skillet over medium-high heat with cooking oil.
- Cook chicken pieces for 5-7 minutes per side until charred and internal temperature reaches 165°F (74°C). Work in batches if needed to avoid overcrowding.
- Transfer cooked chicken to a cutting board and let rest for 5-10 minutes.
- Chop chicken into ½-inch bite-sized pieces and serve in burritos, bowls, tacos, or salads.
