Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups old fashioned oats
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup raisins (optional)
- 1 cup chocolate chips or chopped nuts (optional)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Cream the butter and sugar: In a large bowl, use an electric mixer to cream together the softened butter and brown sugar until the mixture is smooth and fluffy, about 2-3 minutes.
- Add the eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Add the oats and any extras: Stir in the old fashioned oats, along with any optional add-ins such as raisins, chocolate chips, or nuts.
- Scoop the dough: Use a spoon or cookie scoop to drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake: Bake the cookies for 10-12 minutes, or until the edges are golden brown and the centers are set. Keep an eye on them to prevent overbaking.
- Cool the cookies: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
